Fig gratin



Ingredients :

- 8 figs
- 6 Eggs
- 10 cl of Orange juice
- 4 Tablespoon of honey
- 2 Tablespoon of single cream
- Almond slices


Preparation :

Wash the figs and cut them into quarter. Place them into little ramekins. 
Mix the orange juice with the honey.
Carefully, on low heat, using a double boiler, mix the orange juice with the yolks while using whisk, being very careful for the mixture to not boil.
When the mixture is frothing, take it away from the heat and add the cream.

Pour the mixture onto the figs on the ramekin and grill for 5 minutes.
Then garnish with the almond slices.
